I changed the dates and my whole book changed
That is expected — changing the period rebuilds the book from scratch across the new dates, so the page count, the layout and the price all change with it. Set the period you want first, then do your fine-tuning in Edit content and on the cover. Doing it the other way round means redoing work.
Where to find it: Select the time period to be printed.
