Do I have to finish this in one go?
No, take as long as you like. Your work stays with the book you are on, and the book stays in My Library of Saved Books, so you can come back through See my books and Resume editing whenever you want.
The surest way to find it again is to select Add to cart once it is roughly how you want it. A book in your basket is easy to come back to — and you can still change it: EDIT on the cart line reopens it for editing.
