Your book uses a copy of your account taken when it was imported, so anything posted since then will not be there. Select Empty cache in the Add and select content panel to fetch everything again, and check that your date range reaches up to today. Two things to expect: it takes several minutes on a large account, and the fresh import can change your page count and price, so check both afterwards.
If it is only one or two photos, you can also skip the re-import: press Add content → Import photos and add them from your phone or computer, dated where you want them.
Where to find it: Empty cache, bottom of the Add and select content panel.
